Rice and Beans

Ingredients

  • 4-15 oz cans of pink beans (may be in the Mexican food section)
  • 15 oz can tomato sauce
  • 2 tbsp Goya Recaito
  • 2 tbsp Goya Sofrito
  • 1 envelope Sazon Goya Sin Achiote (comes in an orange box)
  • 1/4-1/3 cup olive oil
  • Small green pepper, diced small
  • Small onion, diced small
  • 1/2 of a potato, peeled and diced small
  • 1/4 cup diced ham
  • 6-8 cups Long grain rice

Directions

  1. Combine all ingredients in a pot and bring to a boil. Simmer for 2 hours or transfer to a crockpot and cook on low for 1-2 hours. Cook rice as normal. Serve bean mixture over rice.
