Ingredients
- 250g chick peas
- salt
- pepper
- 2 tsp cumin
- 2 large cloves garlic, crushed
- 2 tbs tahini
- 180ml fresh lemon juice
- 70ml olive oil
- 1 large pinch cayenne pepper
Directions

Soak chick peas overnight or for a few hours in cold water

Drain and simmer and fresh cold water until really soft (usually more than an hour) – adding salt towards end of cooking time

Drain water and set aside

Cool a little and put in the liquidizer with the rest of the ingredients

Add enough of the cooking water to achieve a soft cream

Decorate with a dribble of olive oil and sprigs of parsley
