Turkey Marsala

Serves 6 people

Ingredients

  • 6 turkey breast cutlets (or substitute boneless skinless chicken breast if unavailable)
  • 3 Tbsp olive oil, divided
  • 12 oz mushrooms, sliced
  • 1-1/2 cups sliced onion
  • 3/4 cup Marsala wine (or substitute white grape juice with a Tbsp of balsamic vinegar)
  • 1-1/2 Tbsp chopped parsley

Directions

  1. Heat 1 tablespoon of the olive oil in a large skillet over high heat until hot; add turkey. Cook 1 to 2 minutes each side; remove from skillet and keep warm. Add remaining oil, mushrooms and onions to skillet; cook and stir 5 minutes. Reduce heat to low; add wine and simmer uncovered 2 minutes. Return cutlets to skillet, coat with sauce; sprinkle with parsley.
