Carrot and Ginger Soup

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 tbsp fresh ginger root, chopped
- 1 tsp ground cumin
- 1 tsp paprika
- pinch cayenne
- 1 1/2 lbs carrots (6 large) peeled and chpoped (3 cups)
- 1 large potato, peeled and diced (2 cups)
- 6 cups chicken stock
- 1 tbsp honey
- 1 tbsp lemon juice
- salt
- pepper
Directions

Saute onion, garlic, ginger for 5 minutes.

Add cumin, paprika, cayenne, saute 1 minute.

Add carrots, potato, 4 cups stock, honey, lemon juice. Cook 30 – 40 minutes.

Puree. Season with lemon juice, salt and pepper.

Add stock to thin if needed.
