Carrot and Ginger Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 tbsp fresh ginger root, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • pinch cayenne
  • 1 1/2 lbs carrots (6 large) peeled and chpoped (3 cups)
  • 1 large potato, peeled and diced (2 cups)
  • 6 cups chicken stock
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • salt
  • pepper

Directions

  1. Saute onion, garlic, ginger for 5 minutes.

  2. Add cumin, paprika, cayenne, saute 1 minute.

  3. Add carrots, potato, 4 cups stock, honey, lemon juice. Cook 30 – 40 minutes.

  4. Puree. Season with lemon juice, salt and pepper.

  5. Add stock to thin if needed.
