Ingredients
- 3 eggs
- 1 C oil or applesauce
- 2 C sugar
- 2 t vanila
- 2 C zucchini, shredded
- 1 8 oz. can crushed pineapple, drained
- 3 C flour
- 1 t slat
- 2 t baking soda
- 1/2 t baking powder
- 1 1/2 t cinnamon
- 3/4 t nutmeg
Directions

Beat eggs to blend with electric mixer. Add oil, sugar, and vanilla; continue to beat until thick. Stir in zucchini and pineapple. Add dry ingredients. Stir gently until blended. Pour into greased muffin tins or paper baking cups in muffin tins. Bake at 350 degrees.
