Frosted Pumpkin Cookies

Ingredients

  • Cookies:
  • 2 sticks unsalted butter
  • 3 cups brown sugar
  • 1 1/2 cups pumpkin
  • 1 1/2 Tablespoon vanilla
  • 1 1/2 Tablespoon molasses
  • 1 1/2-2 eggs
  • 4 1/2 cups flour
  • 1/2 Tablespoon baking soda
  • 1/2 Tablespoon salt
  • 1/2 Tablespoon cinnamon
  • 1 1/4 teaspoon nutmeg
  • 3/4 teaspoon cloves
  • Frosting:
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup cream
  • 1/2 Tablespoon vanilla
  • 2 cups powdered sugar

Directions

  1. For cookies, cream and scrape butter and brown sugar.

  2. Add pumpkin, vanilla, molasses, and eggs.

  3. Sift and add flour, baking soda, salt, cinnamon, nutmeg, and cloves.

  4. Drop by teaspoonfuls on baking sheet and bake at 350 degrees for 10 minutes.

  5. For frosting, melt butter, brown sugar, cream and vanilla.

  6. Sift powdered sugar into large bowl, add it to the mixture and whisk until smooth.

  7. Dip cooled cookie into frosting and let set 1 – 2 hours.
