Watercress Salad with Tangerine Vinaigrette

Ingredients

  • 2 or 3 tangerines
  • 3 tablespoons olive oil
  • 2 bunches watercress, cleaned, stalks removed
  • 1/2 cup thinly sliced red onion
  • 1/4 cup crumbled goat cheese

Directions

  1. Wash and dry tangerines.

  2. Finely grate tangerine peel.

  3. With a small knife, cut peel away from tangerines.

  4. Working over a bowl, cut sections away from with pith.

  5. Squeeze tangerine over bowl to measure 1 tablespoon tangerine juice.

  6. In a medium bowl whisk together olive oil, tangerine juice, grated peel, and salt and pepper to taste.

  7. Set aside.

  8. In large bowl combine watercress, sliced onion and tangerine sections.

  9. Drizzle dressing over watercress; toss to coat.

  10. Top with cheese, and serve.
