Three Cheese Chicken Penne Pasta Bake

Ingredients

  • 1 1/2 c multigrain penne pasta, uncooked
  • 1 pkg. fresh baby spinach leaves
  • 1 lb boneless skinless chicken breasts cut into bite size pieces
  • 1 tsp dried basil leaves
  • 1 1/2 c pasta sauce
  • 1 2/3 c diced tomatoes, drained
  • 1/4 c light cream cheese spread
  • 1 c part skim mozzarella shredded cheese, divided
  • 2 tbsp light Parmesean grated cheese

Directions

  1. at oven to 375. Cook pasta, adding spinach to boiling water for last minute.

  2. Cook & stir chicken and basil in large, non-stick skillet on medium – high heat for 3 minutes. Add pasta sauce and tomatoes; bring to a boil. Simmer 3 minutes or until chicken is done. Stir in cream cheese spread.

  3. Drain pasta mixture; return to pan. Add chicken mixture and 1/2 c mozzarella. Spoon into 2L baking dish.

  4. Bake 20 minutes. Sprinkle with remaining cheeses. Bake 3 minutes.
