Chicken Casserole

Ingredients

  • 1 c chopped celery
  • 1/2 c chopped onion
  • 1/4 c chopped green pepper
  • 1/4 c margarine
  • 4 c cubed cooked chicken
  • 2 (4oz) cans sliced mushrooms, drained
  • 12 pimento stuffed green olives, sliced
  • 2 (10.75oz) cans cream of chicken soup
  • 2 c milk
  • 2 (8oz) packages wide egg noodles, cooked & drained
  • TOPPING
  • 1 c cornflakes crumbs
  • 1/2 c shredded cheddar cheese
  • 1/4 c butter or margarine, melted

Directions

  1. In a skillet, saute celery, onion & green pepper in butter. Remove from the heat; add chicken mushrooms, olives, soup, milk and noodles. Mix well. Spoon into a 2 qt baking dish. Cover and bake at 325 for 25 minutes.

  2. Meanwhile, combine topping ingredients. Sprinkle topping around edges of casserole; return to the oven for 5 minutes or until the cheese is melted.
