Grilled Chicken Breast and Vegetables

Ingredients

  • Chicken breasts: 4 halves skinless boneless
  • Olive oil: 2+1 tbsp
  • Garlic: 2 cloves, finely minced
  • Dried thyme: 1 tsp
  • Fresh lemon juice: 1 tbsp
  • Freshly ground black pepper: 1/2-1 tsp
  • Salt: 1/2-1 tsp
  • Bell peppers: 2, sliced
  • Zucchini: 2, sliced

Directions

  1. Wash chicken breasts and pat dry.

  2. Mix 2 tbsp olive oil, minced garlics, thyme, salt and pepper.

  3. Rub the mixture over chicken breasts.

  4. Drizzle 1-2 tbsp olive oil over sliced zucchini and bell peppers. Season with salt and pepper.

  5. Grill chicken breasts and vegetables over medium-high heat. Do not over cook them (about 5 min on each side).

  6. Sprinkle with fresh lemon juice and serve.
