Banana Cream Pie

Ingredients

  • 3/4 c white sugar
  • 3 egg yolks, beaten
  • 1/3 c flour
  • 1 pie crust
  • 2 c milk
  • 1 1/4 tsp vanilla
  • 2 tbsp butter
  • 4 bananas, sliced

Directions

  1. In a saucepan, combine the sugar, flour & salt. Add milk gradually by stirring gently. Cook over medium heat, stirring constantly, until the mixture is bubbly. Keep stirring and cook for about 2 more minutes and then remove from the burner.

  2. Stir in small quantity of hot mixture into the beaten egg yolks and immediately add egg yolk mixture to the hot mixture. Cook for 2 more minutes; remember to keep stirring.

  3. Remove the hot mixture from the stove, and add butter & vanilla. Stir until the whole thing has a smooth consistency.

  4. Slice bananas into the cooled baked pastry shell. Top with pudding mixture.

  5. Bake at 350 for 12-15 minutes.

  6. Chill for 1 hour.
