Mom’s Pancakes

Ingredients

  • 2 Tbsp butter or margarine
  • 2 1/4 C flour
  • 1/4 C sugar
  • 2 C milk
  • 1/2 tsp salt
  • 2 tsp baking powder (for fluffier pancakes, add a little more baking powder)
  • 2 eggs

Directions

  1. Put butter in a small pan on low heat to melt

  2. In medium mixing bowl, combine flour, sugar, salt, and baking powder

  3. In another bowl, mix eggs and melted butter

  4. Whip egg mix and milk into the flour mixture

  5. On medium heat, pour batter in pan for the desired size of pancake

  6. Cook until middle is bubbly and edges are slightly dry, then flip the pancake

  7. Cook a few more minutes, then serve
