Tuna Cake Salad

Ingredients
- 12 oz tuna, drained
- 2 tbsp onion, finely chopped
- 2 crispbreads, crushed
- 2 eggs
- 4 cups salad greens
- Dressing
- 2 tsp olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- pepper
Directions

Heat skillet over med heat and coat with cooking spray.

Mix together, tuna, onion, crispbreads and eggs in a med bowl. Form into 16 small cakes/patties each 1 in diameter.

Cook cakes in skillet until browned, about 3 min per side.

Place greens in bowl and toss with dressing, divide and top with 4 tuna cakes each.
