Tuna Cake Salad

Ingredients

  • 12 oz tuna, drained
  • 2 tbsp onion, finely chopped
  • 2 crispbreads, crushed
  • 2 eggs
  • 4 cups salad greens
  • Dressing
  • 2 tsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • pepper

Directions

  1. Heat skillet over med heat and coat with cooking spray.

  2. Mix together, tuna, onion, crispbreads and eggs in a med bowl. Form into 16 small cakes/patties each 1 in diameter.

  3. Cook cakes in skillet until browned, about 3 min per side.

  4. Place greens in bowl and toss with dressing, divide and top with 4 tuna cakes each.
