Chicken Salad with Oranges and Pistachios

Ingredients
- 2 1/2 lbs rotisserie chicken, roughly chopped to 3 cups
- 2 oranges, peeled and sectioned
- 1 tbsp red onion, finely chopped
- 1 tbsp olive oil
- 1 tbsp sherry vinegar
- salt and pepper
- 4 cups romaine lettuce, chopped
- 1/4 cup pistachios, toasted and roughly chopped
Directions

Combine chicken, oranges, onion, oil, vinegar, salt and pepper in bowl, set aside 5-10 min.

Add greens and pistachios and toss gently.
