Hurry Up Chicken Pot Pie

Ingredients

  • 2 c chopped cooked chicken
  • 2 hard-boiled eggs, sliced
  • 1/2 c thinly sliced carrots
  • 1/2 c frozen peas
  • 1 can cream of chicken soup
  • l cup chicken broth
  • salt and pepper, optional
  • 1 1/2 c instant biscuit mix
  • 1 c milk
  • 1 stick butter, melted

Directions

  1. eheat oven to 350.

  2. In a greased 2 quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper.

  3. Pour over the layers. Stir together and biscuit mix and milk, pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30-40 minutes.
