Ingredients
- 1/2 tsp minced garlic
- 1/2 tsp oregano
- 2 tsp red wine vinegar
- 4 boneless chicken breasts
- 1 tblsp veg or olive oil
- 1 14.5 can tomatoes diced - drained
- 1/2 cup chopped onion
- 1/2 cup chopped pepper
- 2 cups water
- 3/4 cup long grain white rice
- 1 tsp salt
- 2 chicken boullon cubes
- 8 green olives (opt)
- 1 tblsp cilantro leaves
Directions

mix garlic, oregano & red wine vinegar

pour over chicken to marinate – 1 hour

brown chicken in oil 6-8 mins

remove to plate
-
add tomatoes, onion & pepper to pan & cook on medhigh until softened – 3-4 min

add water, rice, salt and boullion (or maybe chicken broth)

stir and bring to boil then reduce to low
-
add chicken back to pan
-
cover & cook 25-30 mins
