Blondies

Ingredients

  • 1/2 c. butter, room temperature
  • 1 c. light brown sugar
  • 1 tsp pure vanilla extract
  • 1 TBS whole milk
  • 1 egg, room temperature
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 c. unbleached flour
  • 1/4 c. whole wheat flour

Directions

  1. Cream butter and brown sugar for 1 minute.

  2. Add vanilla extract and milk for 30 seconds.

  3. Mix in egg.

  4. Sift in salt, baking powder and flours.

  5. Add any additions (chocolate chips, rolled oats, nuts, etc.)

  6. Line 8×8 metal baking pan with parchment paper.

  7. Lightly mist pan with oil and pour in the batter.

  8. Rap pan on counter 5-10 times to ensure all air bubbles have surfaced.

  9. Spread batter evenly over pan.

  10. Bake at 350F for 20-25 minutes (if using glass baking pan, bake 25-30 minutes, rotating pan at 15 minutes).
