Bird’s Nests

Ingredients

  • 1/2 c butter
  • 1/4 c brown sugar
  • 1 egg, separated
  • 1/2 t vanilla
  • 1 c flour
  • 1/2t salt
  • chopped nuts
  • raspberry jam

Directions

  1. Cream butter and sugar, add the egg yolk and vanilla. Sift together the flour and salt, add to creamed mixture. Roll into 1-inch balls and dip into slightly beaten egg white. Roll in chopped nuts. Place on cookie sheet and bake 5 minutes. Remove and press thumb into center of each cookie; fill with jam. Return to oven for 8 minutes. 375F
