Golden Peach Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 (15 1/4 ounce) can sliced peaches , drained and finely chopped

Directions

  1. In a bowl, combine the dry ingredients.

  2. In another bowl, combine the eggs, oil and vanilla; Stir into dry ingrediants just until moistened (batter will be thick).

  3. Fold in peaches.

  4. Fill paper-lined muffin cups two-thirds full.

  5. Bake at 350* for 25-30 minutes or until toothpick comes out clean.

  6. Cool for 5 minutes before removing from pan to a wire rack.
