Simply Good Chicken Casserole

Ingredients

  • 6 boneless skinless chicken breasts
  • 1 quart water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 (10 1/2 ounce) can cream of celery soup
  • 1 (8 ounce) carton sour cream
  • 1/2 teaspoon pepper
  • 2 stacks buttery crackers , crushed
  • 1/4 cup butter or 1/4 cup margarine , melted

Directions

  1. Combine first 4 ingredients in a large Dutch oven; bring to a boil.

  2. Cover, reduce heat, and simmer 1 hour or until tender.

  3. Remove chicken and cool.

  4. Cut chicken into bite-size pieces.

  5. Combine chicken, chicken soup and next 3 ingredients.

  6. ace half of crushed crackers in a lightly greased 11 × 7 × 1.

  7. 5 inch baking dish.

  8. Spoon chicken mixture over crackers.

  9. Top with remaining crackers, and drizzle with butter.

  10. Bake at 325 degrees for 35 minutes or until lightly browned.
