Ingredients
- 1/2 Red Onion, Large, thinly sliced.
- 1/3 C. EVO
- 1/4 C. Red Wine Vinegar or Italian Herb Flavor Wine Vinegar
- Salt and Pepper, to taste
- 2 Garlic Cloves, crushed
- 2 lbs. Fresh Green Beans, trimmed

Bring large pot water to boil while preparing veggies. Place onions in a colander over the sink. In a small bowl, stir together the oil, vinegar, salt/pepper, until combined. Stir in the garlic. Set Aside.

When water comes to boil, add green beans. Cover and cook for 5 to 10 minutes. Do not overcook (Bright Green). Pour the beans and hot water over the onions in the colander. Rinse under cold water to cool. Let drain.

Place beans and onions in a large bowl or larger zipper-top plastic bag. Pour dressing in and mix with the veggies. Chill at least 4 hours, or overnight, stirring or shaking, occasionally.
