Ingredients
- 6 cups water
- 6 medium potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 stalk celery, chopped
- 2 cubes vegetable bouillion
- 1/4 tsp. sage
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 1 tsp. sea salt
- Freshly ground pepper
- 3-4 cups corn
- 1 T. butter
- 1/4 cup green pepper, chopped
- 1/2 cup scallions, minced
Directions

Bring water to boil.

Add potatoes, onions, garlic and celery. Return to boil.

Add boullion and seasonings. Cover and simmer over medium heat for 15 minutes. Cool slightly.

Remove 2 cups of potatoes and set aside.

Blend remaining chowder.

Add corn and reserved potatoes.

Simmer for 5 minutes, stirring often.

Melt butter in small skillet and add peppers and scallions. Saute until bright green.

Add peppers and scallions to chowder.
