Chicken Divan Casserole

I have divided this recipe in half from the original since I’m cooking for two. If making this for a larger group, just double everything except for the topping ingredients.

Ingredients
- 2 C. broccoli florets
- 2 C. cooked chicken, shredded
- 1 cans cream of mushroom soup
- 1/2 C. mayonnaise
- 1/2 C. sour cream
- 1/2 C. sharp cheddar cheese, grated
- 1/2 T. fresh lemon juice
- 1/2 t. curry powder
- Salt and pepper
- 1/4 C. dry white wine or chicken broth
- 1/2 C. freshly grated Parmesan
- 1/2 C. soft bread crumbs
- 2 T. butter, melted

Preheat oven to 350°. Spray an 11 X 7” casserole dish with vegetable oil cooking spray.

Steam the broccoli just short of being cooked. It will fininsh cooking in the oven. Set aside.

In a medium bowl, combine the soup, mayonnaise, sour cream, cheese, lemon juice, curry powder, salt and pepper, to taste, and wine or broth. Whisk together to make a sauce. Add the broccoli and chicken. Mix well with a spatula.

Pour the mixture into the prepared dish. Smooth evenly with a spatula.

Combine the Parmesan, bread crumbs and butter and sprinkle over the top. Bake for about 30 minutes.
