Asian Pasta Stir Fry

Cook time: 20 minutes
Serves 6 people

Ingredients

  • 8 oz wheat linguine
  • 1 lb broccoli ( 6 c florets)
  • 3 med carrots, sliced (1 1/2 c)
  • 1 lb marinated chicken
  • EVOO
  • Pinch hot pepper flakes
  • 1 tbsp fresh ginger
  • 1 clove garlic, minced
  • 1/2 c low sodium soy sauce
  • 1/3 c creamy peanut butter
  • 2 scallions, sliced

Directions

  1. Cook pasta and add broccoli and carrots during the last 5 minutes of cooking.

  2. Reserve 1 c pasta water.

  3. Stir fry chicken in EVOO.

  4. Remove from skillet.

  5. Heat ginger, garlic and red pepper in 1 tbsp EVOO for 1 minute.

  6. Whisk in soy sauce, peanut butter, and 1 c pasta water.

  7. Bring to a boil for 1 minute.

  8. Stir in pasta and chicken.

  9. Sprinkle with scallions.
