Asian Pasta Stir Fry

Cook time: 20 minutes
Serves 6 people

Ingredients
- 8 oz wheat linguine
- 1 lb broccoli ( 6 c florets)
- 3 med carrots, sliced (1 1/2 c)
- 1 lb marinated chicken
- EVOO
- Pinch hot pepper flakes
- 1 tbsp fresh ginger
- 1 clove garlic, minced
- 1/2 c low sodium soy sauce
- 1/3 c creamy peanut butter
- 2 scallions, sliced
Directions

Cook pasta and add broccoli and carrots during the last 5 minutes of cooking.

Reserve 1 c pasta water.

Stir fry chicken in EVOO.

Remove from skillet.

Heat ginger, garlic and red pepper in 1 tbsp EVOO for 1 minute.

Whisk in soy sauce, peanut butter, and 1 c pasta water.

Bring to a boil for 1 minute.

Stir in pasta and chicken.

Sprinkle with scallions.
