Zucchini – Garlic Pasta

Ingredients

  • 1 package (16 oz.) wagon wheel pasta
  • 1/2 pound sliced bacon, diced
  • 1 medium onion, chopped
  • 4 to 6 garlic cloves, minced
  • 2 to 3 medium zucchini (about 1 1/2 pounds), halved and sliced
  • 1/2 tsp. salt
  • 3 tbsp. lemon juice
  • 1/4 cup grated Romano or Parmesan cheese

Directions

  1. Cook pasta according to package directions

  2. Meanwhile, in a large skillet over medium heat, cook bacon until crisp, remove and set aside to drain, discard all but tbsp of drippings

  3. Saute onion and garlic in drippings until tender about 3 minutes add, the zucchini and salt, cook until tender, about 6 minutes.

  4. Drain pasta and add to zucchini mixture, add lemon juice and bacon, toss.

  5. Top with cheese
