Jerk Chicken Nachos

Ingredients

  • 6 cups tortilla chips
  • 3 cups diced cooked chicken
  • 2 cups or more shredded cheddar/monterey jack cheese
  • 2 tbsp caribbean jerk seasoning
  • 1 small red bell pepper
  • 1/2 small lime
  • sour cream

Directions

  1. Preheat oven to 425

  2. Arrange tortilla chips in a slightly overlapping layer on baking sheet

  3. Combine chicken, cheese, and 1 tbsp seasoning

  4. Sprinkle chicken mixture over tortilla chips

  5. Bake 5-7 minutes

  6. Dice bell pepper. Juice the lime half. Mix bell pepper, lime juice, and 1 tbsp seasoning in small bowl

  7. Spoon bell pepper mixture over nachos

  8. Pipe sour cream over top
