Grapefruit Broiled Salmon

Ingredients

  • 3 tablespoons ruby grapefruit juice
  • 2 teaspoons olive oil
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon oregano
  • 1/4 Teaspoon of Pepper

Directions

  1. Preheat the broiler.

  2. In a small bowl, blend the grapefruit juice, oil, mustard, oregano, and pepper.

  3. Place the salmon, skin-side down, on the broiler pan.

  4. Brush with the grapefruit mixture.

  5. Broil 6 inches from the heat for 8 min-utes, or until the fish just flakes when tested with a fork.
