Shrimp on a Stick

Cook time: 5 minutes
Serves 4 people

Ingredients

  • 1 lb uncooked medium shrimp
  • 1/4 c olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 c seasoned bread crumbs
  • 1/2 lemon
  • salt & pepper to taste

Directions

  1. Peel, devein and rinse the shrimp then place them in a bowl with the olive oil and garlic.

  2. Add the bread crumbs and toss until the shrimp are evenly coated.

  3. Thread shrimp onto skewers, then grill over medium heat for about 2 minutes / side or until they are opaque in the center and the crumb coating begins to brown.

  4. Remove from skewers and squeeze on some lemon juice.
