Avocado Tuna Salad

Ingredients

  • 1 avocado, halved
  • 3 TBSP mayonnaise
  • 1/2 Tsp lemon juice
  • 1/4 Tsp dry mustard
  • 3 drops hot pepper sauce
  • 1/2 cup tomato, chopped
  • 2 TBSP onion, finely chopped
  • 5 oz. chunk light tuna
  • 8 tomato slices
  • lettuce leaves

Directions

  1. In medium-sized bowl mash half the avocado.

  2. Add mayonnaise, lemon juice, mustard and pepper sauce. Blend thoroughly.

  3. Chop remaining avocado half into small pieces. Fold into mayonnaise mixture along with tomato, onion and tuna.

  4. For each serving, arrange 2 tomato slices on lettuce leaves. Top with salad.
