Sweet Potato Casserole

Ingredients

  • 3 C mashed sweet potatoes
  • 2 eggs beaten
  • 1/2 tsp. salt
  • 1 stick butter (melted)
  • 1 sm can crushed pineapple (drained)
  • 1/2 C milk
  • 1 C sugar
  • 1 tsp vanilla
  • TOPPING:
  • 1 C brown sugar
  • 1 C chopped pecans
  • 1/2 C flour
  • 1 stick butter

Directions

  1. Mix all ingredients together and place in a 9×12 casserole pan that has been buttered or sprayed with Pam.

  2. Mix together topping (brown sugar, pecans,

  3. and flour) and spoon on top of potato mixture.

  4. Bake at 350 deg. until brown.
