Chicken & Dumplings Clark Southern Style

Ingredients
- 4 chicken breasts
- 2 t. onion powder
- 2 t. salt
- 1 bay leaf
- 6 peppercorns
- 1 carrot, sliced
- 2 eggs
- 1 t. salt
Directions

Cook chicken in 4-5 cups water with the next 5 ingredients until tender. Cool. Shred chicken; drain broth. Return chicken to strained broth in pan.

For dumplings, beat eggs with salt. Gradually add 1 1/2 cups hot broth. Mix in enough flour to keep from sticking to a dough board. Roll out and slice into strips.

Heat chicken and broth to boiling; add dough strips. Simmer until dough is cooked and broth is thickened.
