Waffle with Ham, Cheese, and Fried Egg

Ingredients

  • 2c canned Refried Beans
  • 4TBSP Olive Oil
  • Salt and Pepper
  • 4TBSP Unsalted Butter
  • 4 Eggs
  • 4 frozen Waffles
  • Maple Syrup
  • 4 slices Muenster Cheese
  • 8 slices Ham
  • 1TBSP chopped fresh Parsley

Directions

  1. Preheat oven on broiler setting. In small bowl, combine refried beans and olive oil. Mix well and season to taste with salt and pepper.

  2. In small skillet, melt 1TBSP butter over medium heat. Crack one egg in skillet and cook to desired firmness. Transfer egg to plate and fry remaining eggs in same manner.

  3. Toast waffles to desired doneness. Spread with refried bean mixture. Drizzle waffles with maple syrup and top each with one slice of cheese.

  4. Place waffles on baking sheet and broil until cheese melts. Remove and top each with 2 slices ham, fried egg, and parsley. Season with salt and pepper. Serve immediately.
