Chocolate Chip Pumpkin Muffins

Ingredients

  • 2 C all-purpose flour
  • 2-1/2 tsp baking powder
  • 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 3/4 tsp salt
  • 1/4 tsp baking soda
  • dash ground allspice
  • 1 egg
  • 3/4 C packed brown sugar
  • 3/4 C canned pumpkin
  • 2/3 C milk
  • 3 T butter, melted
  • 1 tsp vanilla extract
  • 1/2 C miniature semisweet chocolate chips

Directions

  1. In a large bowl, combine the first seven ingredients. Combine the egg, brown sugar, pumpkin, milk, butter and vanilla; stir into dry ingredients just until moistened. Stir in chocolate chips. Fill greased or paper-lined muffin cups 3/4’s full. Bake at 375 degrees for 18-22 minutes or until toothpick inserted near middle comes out clean. Cool for 5 minute before removing from pan to wire rack.
