Makes 1 litre, can be chilled in the fridge for up to 5 days, freeze for up to 3 months, or bottle and store in a cool, dark place (not the fridge) for 7-12 months

Ingredients

  • 2kg ripe plum tomatoes, peeled and roughly chopped
  • few torn fresh basil leaves

Directions

  1. Put the tomatoes in a saucepan. Bring to a simmer to reduce to a thick sauce. Pass through the large disc of a vegetable mill or rub through a sieve. Season, add the basil leaves (unless bottling), then chill in the fridge, freeze or bottle.
