Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg, beaten
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp caradamon [you can lump all three of these together and use pumpkin pie spice if you like, I keep all three on hand, so I did it that way.]
- 1 cup pumpkin [NOT pumpkin pie mix]
- 2 cups flour
- 1 pkg (12 oz) white chocolate chips
- 1 cup chopped pecans

ray your cookie sheets if necessary (mine don’t need it). Preheat to 350.

Mix sugars to a uniform color. Add butter and beat to light and fluffy.

Add egg and mix. Stir in baking powder, baking soda and salt. Mix thorougly. Mix in spices.

Measure out the pumpkin and add it in and mix until smooth.

Add flour in 1/2 cup increments, stirring well each time. Add in chips and nuts.

Drop onto cookie sheet (they will spread in baking). Bake for 12-14 minutes or until they’re firm. Keep on the cookie sheet for a few minutes before transferring to a cooling rack.

Frost with cream cheese frosting or sprinkle with powdered sugar.
