Raspberry Cream Pie

Ingredients

  • 3 8-oz. pkgs. cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 10-oz. pkgs. frozen raspberries
  • 5 t. cornstarch
  • 1 cup whipping cream
  • 1 unbaked frozen deep dish pie crust

Directions

  1. Cream together cream cheese, sugar, and eggs until smooth and blended. Pour into pie shell. Bake at 375 degrees for 30 minutes or until filling is firm. Let stand on cake rack until cooled.

  2. Spread with sour cream and chill one hour.

  3. Meanwhile, mix berries and cornstarch in saucepan; cook, stirring frequently until thick and clear. Cool to room temperature. Whip cream and fold in raspberries. Spoon into pie.

  4. Chill.
