Chili Verde

Ingredients

  • 1-1/2 lb chicken
  • 2 lbs pork loin
  • 1-1/2 cup salsa verde
  • 1/2 cup onion, chopped
  • 1/2 tsp pepper
  • 1 tsp cumin
  • 1 bay leaf
  • 1 tsp garlic, minced
  • 2 tsp chicken bouillon
  • 1 cup water
  • guar or xanthan
  • sour cream
  • shredded cheese

Directions

  1. Place chicken or pork loin in crock pot and top with remaining ingredients (through bouillon)

  2. Cook on low 9-10 hours; shred meat with forks

  3. Thicken with guar/xanthan if needed

  4. Serve with sour cream and shredded cheese
