Ingredients
- 3/4 lb pasta
- 1 1/2c half & half
- 3 tbsp sweet onion
- 2 minced garlic cloves
- 2 tbsp flour
- 5oz goat cheese
- 3oz sharp white cheddar
- 1/2c parm-reggiano
- 2 tbsp light sour cream
- 3/4 tsp lemon zest
- S&P
- thyme
- 1 extra large egg yolk
Directions

Preheat the oven to 400 degrees. Butter a 10-inch cast iron skillet.

Cook pasta. Drain & return to pot.

In a large saucepan, simmer cream, onion, garlic. Transfer 1/2c liquid to bowl, whisk in flour and return to saucepan. Thicken/whisk 3 min.

Remove from heat, add goat cheese, cheddar and half the parm until melted. Stir in sour cream, zest and seasoning.

Add yolk to bowl, whisk in 1/2c cheese sauce, and back to saucepan. Pour sauce over pasta.

Transfer to a skillet, sprinkle with remaining parm, and bake 25 min. Stand 5 min. Sprinkle with fresh thyme is desired.
