Ingredients
- 6 roma tomatoes (1/2 inch thick)
- 2 tbsp olive oil
- 1/2 tsp each salt & pepper
- 1/2c balsamic vinegar
- 3-4oz fresh mozzarella
- 12-15 basil leaves
- 4 slices thick bread
Directions

Preheat oven- 325 degrees. Place tomato on baking sheet, drizzle with oil, season, and roast 45 min.

Boil vinegar in saucepan. Simmer 12 min. Reduce from hit, pour into glass bowl, sit at room temp.

Brush outside of each bread slice with oil. Top with mozz, tomato, basil, tomato, mozz. Cook 5 min each side.

Drizzle with balsamic glaze.
