Apricot and Banana Custard

Ingredients
- 1/3 cup dried apricots, chopped (not treated with sulfur dioxide)
- 1/3 cup boiling water
- 1 small banana, sliced
- 1 tbsp custard powder
Directions

t the apricots into a small saucepan and cover with 3.5 tbsp boiling water; simmer for 2-3 minutes.

Blend the apricots and cooking liquid together with the banana.

Put the custard powder in a small saucepan and mix in a little of the boiling water to make a paste.

Add the rest of the boiling water and stir briskly over medium heat until smooth and creamy.

Mix the custard with the puree.
