Ingredients
- 1 6oz package long grain wild rice
- 1 teaspoon lemon peel, grated
- 1 tablespoon lemon juice
- 2 tablespoons butter or margarine
- 1 tablespoon onion, chopped
- 1/4 cup celery, coarsely chopped
- 1 3oz can mushrooms, drained
- 1 egg, beaten
- 1 tablespoon parsley, chopped
- 2 tablespoons pimento, drained
Directions

Cook rice mix as package label directs. Undercook rice rice rather than overcook rice; water should be almost completely absorbed. Add lemon peel and lemon juice.

In a medium skillet, add butter and saute onion, celery, and mushrooms for about 5 minutes. Remove from heat.

Add rice mixture, egg, parsley, and pimento; toss lightly with fork to mix well.

Makes 3-1/2 cups.
