Fresh Apple Cookies

Ingredients

  • 1/2 cup (1 stick) butter
  • 2 cups packed brown sugar
  • 2 tbsp flour
  • 1 cup peeled, grated tart apple
  • 1/2 tsp ground cinnamon
  • 3 cups quick cooking oats, uncooked
  • 2/3 cup chopped walnuts or pecans
  • 1 tsp vanilla extract

Directions

  1. Line cookie sheet with wax paper.

  2. In medium saucepan, melt butter over medium heat. Add the brown sugar, flour, grated apple and cinnamon. Bring mixture to a boil; boil 1 min. Remove from heat and immediately add oats, nuts and vanilla extract, mixing until well blended.

  3. Quickly drop by heaping teaspoonfuls onto wax paper. Loosely cover with plastic wrap and refrigerate at least 1 hour until fim. Store tightly covered in refrigerator.

  5. Fresh pear and nutmeg cookies

  6. Prepare as directed about but substitute 1 ucp grated fresh pear for the apple and 1/4 teaspoon nutmeg for the cinnamon.
