Ingredients
- 2 cups packed brown sugar
- 3/4 cup (1 1/2 sticks) butter
- 1 5oz can (2/3 cup) evaporated milk
- 1 4 serving size instant butterscotch pudding mix
- 2 1/4 tsps instant coffee of espresso powder
- 2 1/2 cups quick cooking oats

Line cookie sheet with wax paper.

In a large heavy saucepan, combine the brown sugar, butter and evaporated milk. Cook and stir until mixture comes to a rolling boil. Remove the pan from heat.

Stir in the pudding mix, coffee powder and oats, mixing well.

Quickly drop the mixture by tablespoonfuls onto the wax paper. Allow to cool and become firm, about 30 mins.
