Creamy Carrot Basil Soup

Serves 4 people

Ingredients

  • 1/2 Cup of finely chopped onions
  • 2 Tbsp of butter, cubed
  • 2 1/4 Cups of sliced carrot
  • 1 Small potato, peeled and cubed
  • 14.5 oz of chicken broth
  • 1 Cup of heavy whipping cream
  • 1/4 Tsp of salt
  • 1/8 Tsp of pepper

Directions

  1. In a large pot, sauté onion in butter until tender.
  2. Add carrots, potato and broth. Cover and cook on medium heat for 30 minutes, until tender.

  3. Meanwhile process basil in a blender or a food processor.

  4. Transfer to a blender or a food processor in small batches and blend until smooth. Return to pan.

  5. Stir in cream, salt, and basil.

  6. Cook over low heat until heated through.

  7. Serve.
