Ingredients
- 1/2 Cup of finely chopped onions
- 2 Tbsp of butter, cubed
- 2 1/4 Cups of sliced carrot
- 1 Small potato, peeled and cubed
- 14.5 oz of chicken broth
- 1 Cup of heavy whipping cream
- 1/4 Tsp of salt
- 1/8 Tsp of pepper
Directions
- In a large pot, sauté onion in butter until tender.

Add carrots, potato and broth. Cover and cook on medium heat for 30 minutes, until tender.

Meanwhile process basil in a blender or a food processor.

Transfer to a blender or a food processor in small batches and blend until smooth. Return to pan.

Stir in cream, salt, and basil.

Cook over low heat until heated through.

Serve.
