Beef Stir Fry

Serves 4 people

Ingredients

  • 2 TBSP Cornstarch
  • 2 tsp sugar
  • 6 TBSP soy sauce
  • 1/4 cup apple juice or water
  • 1 lb round steak, cut into strips
  • 3 cups broccoli
  • 2 med carrots, thinly sliced
  • 6 oz. pea pods
  • 2 TBSP onions, chopped
  • 8 oz sliced water chestnuts, undrained

Directions

  1. Combine cornstarch, sugar, soy sauce and apple juice until smooth. Add beef and toss to coat; set aside. Stir fry broccoli, carrots, pea pods and onion in 1 TBSP oil for 1 min. Add water chestnuts. Cover and simmer 4 min. Remove and keep warm. Stir fry beef in remaining oil until tender. Return veggies to pan, toss. Serve over rice.
