Ingredients
- 1 3/4 cup carrots
- 1 cup potato
- 1/4 cup red lentils
- 1/2 tsp ground coriander
- 300 mL milk
Directions

Trim and peel the carrots and potato; chop into cubes and place in a pan.

Rinse lentils thoroughly, discard any black bits and add to the pan.

Add coriander and milk; bring entire mixture to a boil, then reduce heat and simmer for 40 minutes until lentils are soft.

Mash until smooth; use refrigerated portions within 24 hours.
