Pork Loin Roast

Ingredients

  • 3 lb pork roast; rolled, boned and tied
  • 12 oz jar cherry preserves
  • 2 T lt. corn syrup
  • 1/4 red wine vinegar
  • 1/4 t. salt
  • 1/4 t. cinnamon
  • 1/4 nutmeg
  • 3 T toasted almonds

Directions

  1. Rub roast w/ a little s&P

  2. Place on rack in shallow baking pan

  3. ast uncovered in 325 oven for 2-2.5 hours.

  4. Meanwhile, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves.

  5. Heat to boiling, stirring frequently; reduce heat and simmer 2 mins.

  6. Add toasted almonds

  7. Keep sauce warm

  8. en meat has roasted, spoon enough hot cherry sauce over toast to glaze; return to oven for about 30 mins or more, until meat is at 170.

  9. Baste roast w/ sauce several times during last 30 mins.
