Ingredients
- 3 lb pork roast; rolled, boned and tied
- 12 oz jar cherry preserves
- 2 T lt. corn syrup
- 1/4 red wine vinegar
- 1/4 t. salt
- 1/4 t. cinnamon
- 1/4 nutmeg
- 3 T toasted almonds
Directions

Rub roast w/ a little s&P

Place on rack in shallow baking pan

ast uncovered in 325 oven for 2-2.5 hours.

Meanwhile, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves.

Heat to boiling, stirring frequently; reduce heat and simmer 2 mins.

Add toasted almonds

Keep sauce warm

en meat has roasted, spoon enough hot cherry sauce over toast to glaze; return to oven for about 30 mins or more, until meat is at 170.

Baste roast w/ sauce several times during last 30 mins.
