Walnut and Dried Fruit Bars

Ingredients

  • 1 cup quick cooking oats
  • 3/4 cup whole wheat flour
  • 1/4 toasted wheat germ
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup honey
  • 1/3 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1 egg beaten
  • 1 egg white
  • 3/4 cup chopped dried fruit
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350

  2. Spray 8 × 8 baking pan

  3. Mix oats, flour, wheat germ, cinn, salt

  4. Whisk together honey, applesauce, oil, eggs and stir in oatmeal mixture – add fruit

  5. Spread in pan and bake 30 – 35 minutes

  6. Can brush top with fruit only preserves while hot

  7. Cool and cut into 12 bars
