Eggy crumpets with bacon and HP sauce

Ingredients

  • 6 rashers dry-cured bacon
  • knob of butter
  • 1 large organic egg, plus one large yolk
  • 2 round crumpets, halved
  • HP sauce
  • tomato ketchup (optional)

Directions

  1. Heat a large non-stick frying pan until hot and fry the bacon until just crisp on both sides, then stack on the side of the frying pan with the fat side touching the edge. Add the butter to the pan.

  2. Beat the egg and egg yolk together, season with freshly ground black pepper and dip the crumpets in. Fry them in the pan on both sides, until golden brown and just cooked. Serve the crumpets topped with the crispy bacon, HP sauce and a squeeze of tomato ketchup, if you like.
