Corn Cob Fritters

Ingredients

  • 3 fresh corn cobs
  • 1/4 c chopped chives
  • 1/4 c chopped flat parsley
  • sea salt
  • freshly ground pepper
  • 1/2 t dried chilli flakes
  • 3/4 c plain flour
  • 1 t baking powder
  • 3 eggs
  • olive oil for cooking

Directions

  1. Remove kernels from corn cob

  2. Place 2/3 of the kernels in a food processor

  3. Add herbs, seasonings, chilli flakes, flour, baking powder and eggs

  4. Pulse to form a batter

  5. Stir in the remaining kernels

  6. Heat a frying pan with oil

  7. Drop 2 T size ladles per fritter
