Corn Cob Fritters

Ingredients
- 3 fresh corn cobs
- 1/4 c chopped chives
- 1/4 c chopped flat parsley
- sea salt
- freshly ground pepper
- 1/2 t dried chilli flakes
- 3/4 c plain flour
- 1 t baking powder
- 3 eggs
- olive oil for cooking
Directions

Remove kernels from corn cob

Place 2/3 of the kernels in a food processor

Add herbs, seasonings, chilli flakes, flour, baking powder and eggs

Pulse to form a batter

Stir in the remaining kernels

Heat a frying pan with oil

Drop 2 T size ladles per fritter
